🏡The Heart of the Home: Breathing New Life Into Leftovers

In most homes, the kitchen is often called "the heart of the home" — and around here, we believe that's true in every sense. Just like we breathe new life into old furniture and forgotten corners of the home, we love finding ways to repurpose food, traditions, and everyday moments into something beautiful, delicious, and meaningful.
I've always been that child — the one who hated leftovers.(Still true, honestly.)But I found a little magic trick: when you give leftovers a second life with creativity and love, they stop feeling like yesterday’s meal… and start feeling like something new altogether.
This Easter, we prepared a feast steeped in tradition — a slow-roasted pork shoulder using a recipe that's been passed down in my family for generations, paired with roasted vegetables, fluffy mashed potatoes, and savory gravy. (You can find the full Easter meal spread HERE.)
With a 20-pound roast, we fed the whole family — mine and my husband’s — and still had plenty left over. Rather than let it sit in the fridge or go to waste, I saw an opportunity.
Could I create three new meals from what we had?
Meals that my picky eaters would actually eat?
Challenge accepted.

Rolled in soft tortillas, topped with green sauce and melty cheese, these enchiladas made my leftover pork feel like a celebration all over again.
3. Cuban Sandwiches
Toasted sourdough bread, tangy sliced pickles, melted Swiss cheese, and that savory pork piled high — the perfect "easy but feels fancy" meal we all devoured.
